Chicken Stuffed Zucchini


Well dinner tonight was quite a success if I do say so myself.

I got a wild hair to try to do some kind of stuffed zucchini...seeing ours is about 6feet long and weighing about 10 lbs LOL.

I decided to cut the biggest zucchini in half long ways.
Spoon out all the seeds and dig a good amount of zucchini meat out.
Fill it with boiled & cubed boneless, skinless chicken breasts (season to taste)
Spray zucchini topped with chicken with Canola Oil spray
Add sliced mushrooms and cubes of Fat Free Cream Cheese
Spray again with Canola Oil spray

Cook in oven on 350 for 40 min.
Take out and let cool slightly
Sprinkle with grated cheese
Put back in oven and broil on HI for about 5 minutes

Serve after its cooled for a bit!


It was quite tasty!
Phillip added BBQ sauce to his for a little extra zest!

I'm gonna give that a try. I love zucchini but have never figured out an inventive way to cook with it
